Here is a study from Oregon's Bob's Red Mill that included employee engagement as a tool to reduce wasted food. Project resulted in 176 ideas submitted from staff and - after implementing employee generated solutions - there was an over 70% reduction in waste. I have attached the report. This project is a part of the Pacific Coast Food Waste Commitment.
