Hi Saskia,
I have seen a 3D model of an energy efficient / eco-house. It had lots of those push a button & a bit of the house lights up & next to it had examples of the materials used in the construction (eg double glazing, insulation, water efficient shower heads, etc) that people could touch + info on green cleaning products, furniture & paints. It was built out of wood & had lots of cutaway sections so you could see in. Theirs was in a fixed location, but it would be easy to do one that packs away into a trailer. Unfortunately it was in Australia, so I can't show you the example, but I could talk to you about it a bit more! I have cc'd this to the fostering sustainable behaviour listserv, so perhaps someone on the list has some recommendations?

you can try the Centre for Alternative Technology in Wales. They have a nice in-site demos, and probably also some ideas on what can be produced for display: http://www.cat.org.uk/index.tmpl?refer=index&init=1
