I am teaching an on-line class on the basics of sustainability, and one of the three projects will be "greening" a local business (making it more sustainable). We use the Angry Trout Cafe Notebook as a resource -- the owner has done a great job of making it practical and real. The students are designers, and I would like to move beyond a simple proposal to something more. It seems to me the restaurant is a great way to learn about sustainability since everything they do is on display. A proposal to make their local business more sustainable could go beyond just the impact of that one business. It could impact many of the customers as well. Any suggestions on how to incorporate or phrase this, perhaps even some ideas on a CBSM exercise leading up to the project? Web links are also deeply appreciated.
