Is that adjacent to bins?

Here be the elephant: "At the same time, much is also dumped that is not re-usable. Is there too much in the world today? Has marketing outdone itself in growing a culture that is not sustainable? This instead of relying on historic manufacturing and community consumption patterns that congest every clean up method we have, perhaps we do need to consume less."
The mantra has always been REDUCE, reuse (Vinnies/Salvos) and recycle (some insert a refuse after reduce). While on one level the recycling industry doesn't address the production-consumption system, it has a valuable role in reducing resource use and minimising waste streams.
I'm not sure what a social marketing approach to reducing production consumption would look like!

This (a conference footprint measuring kit) is certainly a great idea Kristin. Haven't seen one yet. Would be valuable. I might assist developing one but can't lead such a project.

At the Population Health Congress in NZ recently; they calculated travel energy using on on-line calculator (sorry didn't note which one). There were also suggesting deelgates bought carbon offsets. The whole conference was also catered vegetarian, byo satchels and water bottles (with half a dozen drink fountains around the premises)to reduce carbon footprint.

In Australia the Gloria Jeans chain does this disposable cup thing too. I've never spoken to them but in thinking through the issue as to how to do this, I decided that their prime motivator is cost reduction by not having to pay staff to collect, clean/wash the cups, (plus electricity cost on dishwashing). For them this would be a major 'attraction' to the throwaway culture. The other issues you mention - take away - is also critical. That your situation is not actually a coffee shop so the coffee is very incidental to their business is another factor weighing against in house for the same reasons in Gloria Jeans. For Gloria Jeans I was thinking they could offer a line of Keep Cups, but in your situation recycling of cups and compostable might have to be the way to go.
