My work as a professor of University is teaching and research on Food Science. My emphasis is on valorization of food waste and losses for recovery of bio-and technofunctional ingredients for food industry, mainly, polisaccharides. I want to work on social innovation projects to decrease food waste and losses and alleviate poverty through improving food access to more vulnerable people.
