Anyone have any good information or case studies about restaurants going green? I think this would be a long-term proposition, so it would have to being with small, but important steps.

I have developed a resource on behalf on Sustainability Victoria which is free to down load: Up front is the quick steps and if they choose to go for more rigour that is included there. The focus is on waste at this stage however the 15 mins tool box talks can get the conversation going regarding broader issues of sustainability. Included is a training program that can be conducted off site. They have also written a book which talks about some of their outreach efforts, etc. in addition to having many recipes from the cafe: "White Dog Cafe Cookbook: Multicultural Recipes and Tales of Adventure from Philadelphia's Revolutionary Restaurant"
There are lots of other "green" restaurants in the sense of the food they serve, their employment and environmental practices, etc. I don't know of other books or formal case studies since the practices are evolving rapidly, but if you go to www.livingeconomies.org and search through the various local BALLE chapter pages, you can probably find other great stories. I also encourage you to get in touch with Elizabeth U who works in the BALLE HQ in San Francisco on their sustainable food program. She can probably point you to some good resources. One of the most highly successful and well known green restaurants is White Dog Caf in Philadelphia, PA. Judy Wicks founded this restaurant along with the Business Alliance for Local Living Economies (www.livingeconomies.org). Another group, the Chef's Collaborative, is highly innovative in sourcing local and organic food.
