Hi,
I have an opportunity to impact the contract for the new food vendor going in at our government building. Does anyone have any suggestions or recommended reading material on what we should ask for - energy efficiency, recycling, etc and most importantly some thoughts on how to affect consumer behavior in this matter (take out- wanting Styrofoam, etc.)

Maybe you could look into using alternative products? I don't personally know of many, other than compostable plastics as seen in this website. http://worldcentric.org/biocompostables/bioplastics
Making a stand to reduce our carbon footprint would add character to the stall, despite the slightly higher costing but worthwhile alternative.
