I teach a nutrition and sustainability course and I'm putting together a research study which examines whether/to what degree taking this course changes people's eating/buying habits and attitudes. I'm looking for questions to ask/measures that have already been used that look at/quantify people's sustainability habits. For example, I want to find out if they are more likely to shop at farmer's markets, consider whether a food is locally or organically grown when purchasing, etc., after taking the course. Can you point me in the direction of 1) any studies like this that have already been done; and 2) any questionnaires that examine sustainability habits?

The father of the theory of planned behavior (TPB), Icek Ajzen, has sample questionnaires on his website (http://www-unix.oit.umass.edu/~aizen/) that you might helpful is assessing behavior change. They are rather involved, and naturally follow his TPB model, but might provide a starting point.
