Although I have not participated in such a project yet, I have had quite an interest in this subject for the last year and have given quite a bit of thought to this. I have also been using CBSM techniques on myself to increase my own use of local foods. I recently blogged about a new type of commitment, using my own experience of joining a CSA as an example. there are two sites that may help... http://www.lovefoodhatewaste.nsw.gov.au/ and http://foodwise.com.au/ . They don't get in to many of the deeper aspects of food sustainability such as ecosystem impact, fairness and the like, but are a good start.

They have solid info in their newsletter. It may be a good place to start.
Also some of the Transition Towns across the UK and US are doing work in this area.
